Butterscotch Chocolate Chip Cookies

I’ve got a new recipe that I think you’re going to LOVE! If you’re a fan of classic chocolate chip cookies these are my new favorite. These butterscotch chocolate chip cookies are a fun twist on a classic cookie and so easy to make. I also added some sea salt to the top of these cookies and it’s life-changing. Butterscotch Chocolate Chip Cookies Recipe

One of my favorite desserts my mom makes is magic bars. You know the bars with a graham cracker crust, coconut, chocolate chips and butterscotch chips. These cookies are almost a version of magic bars in a cookie form. I would have put coconut flakes in these cookies, but Cory isn’t a fan of coconut. Can you relate?

Butterscotch Chocolate Chip Cookies

These butterscotch chocolate chip cookies are my new favorite. The addition of butterscotch chips in a classic chocolate chip cookie recipe is so good.

Ingredients

  • 1/2 cup Butter softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 Egg at room temperature
  • 1 1/2 cups All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 Cinnamon
  • 3/4 cup Chocolate Chips
  • 1/4 cup Butterscotch Chips
  • Sea Salt optional for topping

Instructions

  • Preheat your oven to 375 degrees F. Line a baking sheet with a silpat. I love using this to make sure the cookies don't stick. If you don't have a silpat you could also use parchment paper.
  • In a medium sized bowl mix together the dry ingredients – flour, baking soda, baking powder, cinnamon and salt.
  • In a large bowl cream together the softened butter, granulated sugar and brown sugar.
  • Add the egg and vanilla extract to the butter mixutre and blend until mixed.
  • Add the dry ingredients (a little at a time) and mix with a spoon.
  • Add the chocolate chips and butterscotch chips
  • Use a cookie scoop to scoop the dough on the silpat lined baking sheet. Bake them for 7-9 minutes or until the edges are slightly brown. Don't overbake them!
  • If you want to add sea salt to the top off the cookies do this as soon as you pull them out of the oven. Let them sit on the pan for a couple of minutes before transferring them to a drying rack.

The sea salt on top of these cookies is totally optional, but I love the sea salt mixed with the butterscotch flavor. I hope your family enjoys these cookies as much as mine does!
